INGREDIENTS
- 240 g self-raising flour or spelt flour with baking power added (874 cal)
 - ½ teaspoon bicarbonate of soda
 - 1 teaspoon ground cinnamon or mixed spice
 - ½ cup brown sugar (278 cal)
 - 1 cup grated carrot
 - 1 cup grated zucchini
 - 200 g chopped dried fruit (424 cal)
 - ½ cup milk (46 cal)
 - 2 eggs, lightly beaten (146 cal)
 - 80 g butter, melted (581 cal)
OR - 20 grams butter (145 cal) and 60 grams of apple puree
 
DIRECTIONS
- Preheat oven to 200°C and spray 12 hole muffin tin.
 - Sift flour, soda and cinnamon into bowl. Stir in brown sugar, carrot, zucchini and dried fruit.
 - Make a well in the centre. Add melted butter, milk and eggs.
 - Mix with fork until well combined. Spoon into muffin tray.
 - Bake 20 minutes. Stand in tin for 5-10 minutes before turning out onto a cooling rack.
